How to make a ProLean Waffle Sandwich

Looking for something delicious for breakfast while also hitting your protein goals! Here's our recipe for a ProLean Waffle Sandwich!

Prolean Waffle Breakfast Sandwich
A high-protein, crispy waffle sandwich loaded with savory turkey bacon and a perfectly
runny egg.
- Prep time: 10 minutes
- Cook time: 15 minutes
- Yield: Makes several waffles/sandwiches (depending on waffle iron size)
Ingredients

For the Waffles (Dry Ingredients)
- 2 ¼ cups all-purpose flour
- 2 scoops Prolean protein powder
- 1 tbsp baking powder
- ¾ tsp salt

For the Waffles (Wet Ingredients)
- 2 cups milk
- ½ cup unsalted butter, melted
- 2 large eggs
- 2 tsp vanilla extract

For the Sandwich Assembly
- Turkey bacon (cooked to your preferred crispiness)
- Eggs (cooked until the yolk is medium-runny)
- Maple syrup (optional)
- Sriracha / "Psy-racha" (optional, for heat)
- Extra butter or cooking spray (for the waffle iron)

Instructions
Step 1: Prep the Waffle Batter

  1. Preheat your waffle iron. If your iron has adjustable heat settings, choose a
darker or higher setting to ensure a crispier waffle.
  2. Mix the dry ingredients: In a large mixing bowl, whisk together the flour,
    Prolean, baking powder, and salt.
  3. Mix the wet ingredients: In a separate medium bowl, whisk together the milk,
melted butter, 2 large eggs, and vanilla extract.
  4. Combine: Pour the wet milk mixture into the dry flour mixture. Stir together just
until combined (do not overmix, a few lumps are fine).

Step 2: Cook the Waffles
1. Grease the hot waffle iron with butter or non-stick cooking spray.

2. Pour about ⅓ cup of batter onto the iron (adjust the amount depending on the
size of your specific waffle maker).

3. Cook until the waffles are golden brown and crisp.

Pro-Tip: Place the cooked waffles on a wire cooling rack while you finish the
rest. This keeps them from getting soggy from the steam!

Step 3: Cook the Fillings

Turkey Bacon: Cook your turkey bacon in a skillet or oven until it reaches your
desired level of crispiness.

The Eggs:  Fry your eggs over-easy or sunny-side up. Aim for a medium runny yolk.

Step 4: Assemble the Sandwich

  1. Lay down one hot waffle as the base.
  2.  Layer on your cooked turkey bacon and the perfectly runny egg
  3. Drizzle with maple syrup and a splash of Psyracha if you want that perfect
    sweet-and-spicy combo.
  4. Top with a second waffle, press down gently, and enjoy!
